{"id":247,"date":"2018-07-06T17:05:21","date_gmt":"2018-07-06T17:05:21","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=247"},"modified":"2018-07-06T17:24:39","modified_gmt":"2018-07-06T17:24:39","slug":"spanakopita","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/spanakopita\/","title":{"rendered":"Spanakopita"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 8<\/h3>\n<p>1 pound fresh or frozen spinach, squeezed dry (see method below)<br \/>\n1 bunch scallions, chopped into 1 \u00bd-inch lengths<br \/>\n1 pack phyllo pastry<br \/>\n3 eggs, lightly beaten<br \/>\n11 ounces feta cheese, crumbled<br \/>\n5 ounces butter, melted<br \/>\n2 tablespoons olive oil (approximately)<br \/>\n1 tablespoon fresh parsley, minced<br \/>\n\u00bd teaspoon pepper<br \/>\n\u2153 teaspoon fresh mint, chopped<br \/>\n\u215b teaspoon salt<\/p>\n<h2>Preparation<\/h2>\n<h3>Preparing the Spinach<\/h3>\n<p>If using fresh spinach, chop it coarsely and steam until cooked. Let it cool, then drain. If using frozen spinach, thaw it and squeeze out the excess water in a sieve or colander until it is quite dry.<\/p>\n<h3>Making the Filling<\/h3>\n<ol>\n<li>Saut\u00e9 the chopped scallions in a little olive oil until soft.<\/li>\n<li>Crumble the feta cheese (not too finely) and put it in a large bowl with the spinach, scallions, mint, salt and pepper.<\/li>\n<li>In another bowl, crack the eggs and beat them lightly. Pour them into the spinach mixture and mix well with a spoon or with your hands. Try not to completely break up the feta, as the finished dish is nice with some sizable nuggets left in.<\/li>\n<\/ol>\n<h3>Assembly<\/h3>\n<ol>\n<li>Preheat oven to 400\u00b0F.<\/li>\n<li>Butter the bottom of a 9\u201d x 13\u201d baking pan. Butter each phyllo sheet before putting in pan and cover bottom of pan with half the sheets, spreading evenly.<\/li>\n<li>Put in filling, then cover with the other half of the phyllo, using the same method of brushing each sheet with butter. When finished, tuck sides down.<\/li>\n<li>Cut through the phyllo topping so it is divided 6\u201d x 3\u201d.<\/li>\n<li>Make an egg wash by beating an egg with a splash of milk and brushing over the top.<\/li>\n<li>Bake in 400\u00b0F oven uncovered.
