{"id":256,"date":"2018-07-06T17:18:15","date_gmt":"2018-07-06T17:18:15","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=256"},"modified":"2018-07-06T17:24:03","modified_gmt":"2018-07-06T17:24:03","slug":"carrot-and-quinoa-soup","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/carrot-and-quinoa-soup\/","title":{"rendered":"Carrot and Quinoa Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>Olive oil for cooking<br \/>\n1 onion \u2013 roughly chopped<br \/>\n1 \u00bd pounds carrots \u2013 roughly chopped<br \/>\n\u00be cup quinoa<br \/>\n\u00bd pound celery \u2013 roughly chopped<br \/>\n\u00bd gallon vegetable stock<br \/>\n\u215b cup garlic \u2013 minced<br \/>\n\u215b cup ginger \u2013 minced<br \/>\n\u2154 tablespoon salt<br \/>\n11 \u215c fluid ounces coconut milk<br \/>\n\u2153 tablespoon curry powder<br \/>\n1 teaspoon cilantro<br \/>\n\u215b cup lemon juice<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Saut\u00e9 onions in the bottom of a soup pot until translucent. Add garlic and ginger and saut\u00e9 a few minutes. Add carrots and celery, saut\u00e9 a few more minutes.<\/li>\n<li>Add salt, curry powder, rinsed quinoa, and stock to soup pot and stir. Cook for at least an hour until carrots are very soft.<\/li>\n<li>Puree with an immersion blender or transfer to food processor or food blender.<\/li>\n<li>Add coconut milk and heat through.
