{"id":258,"date":"2018-07-06T17:20:21","date_gmt":"2018-07-06T17:20:21","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=258"},"modified":"2018-07-06T17:25:31","modified_gmt":"2018-07-06T17:25:31","slug":"vegetable-ragout","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/vegetable-ragout\/","title":{"rendered":"Vegetable Ragout"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>\u00bc cup olive oil<br \/>\n\u00bd pound eggplant \u2013 chopped<br \/>\n\u00bd pound zucchini \u2013 chopped<br \/>\n\u00bd pound mushrooms \u2013 sliced<br \/>\n\u00bd pound onion \u2013 chopped<br \/>\n3 cloves garlic \u2013 minced<br \/>\n14 ounce can diced tomato<br \/>\n\u00bd teaspoon thyme<br \/>\n\u00bd teaspoon sage<br \/>\n\u00bd teaspoon salt, or to taste<br \/>\n\u00bc teaspoon black pepper<br \/>\nA few sprigs parsley, chopped<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Heat oven to 375\u00b0F. Coat eggplant and zucchini in oil (separately) and roast until browned and tender.<\/li>\n<li>Saut\u00e9 chopped onion in olive oil until soft.<\/li>\n<li>Add the mushrooms, garlic, thyme, sage, salt, and pepper, and continue cooking until the mushrooms are very soft, and most of the liquid has cooked off (some liquid is good).<\/li>\n<li>Add tomatoes, eggplant and zucchini. Simmer 20 to 30 minutes more.
