{"id":260,"date":"2018-07-06T17:22:47","date_gmt":"2018-07-06T17:22:47","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=260"},"modified":"2018-07-06T17:23:38","modified_gmt":"2018-07-06T17:23:38","slug":"quinoa-and-squash-gratin","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/quinoa-and-squash-gratin\/","title":{"rendered":"Quinoa and Squash Gratin"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>2 cups water<br \/>\n2\/3 cup quinoa<br \/>\n1\u00bd pounds zucchini or summer squash \u2013 chopped<br \/>\nolive oil to coat squash for roasting<br \/>\n1 tablespoons olive oil<br \/>\n1 onion \u2013 chopped<br \/>\n2 cloves garlic \u2013 minced<br \/>\n\u00bd teaspoon thyme<br \/>\n\u00bd teaspoon rosemary<br \/>\nSalt &amp; black pepper \u2013 to taste<br \/>\n4 eggs<br \/>\n\u00bd cup cheddar cheese \u2013 shredded<\/p>\n<h2>Preparation<\/h2>\n<h3>To cook quinoa:<\/h3>\n<ul>\n<li>Bring water to a boil in a large pot.<\/li>\n<li>Add quinoa, reduce heat, cover and simmer 10 minutes, or until light and fluffy. Set aside.<\/li>\n<\/ul>\n<h3>To prepare roasted summer squash\/zucchini:<\/h3>\n<ul>\n<li>Preheat oven to 375 degrees (conventional).<\/li>\n<li>Lightly coat chopped squash or zucchini with olive oil.<\/li>\n<li>Roast until browned and a knife inserts easily into the pieces. Remove and set aside.<\/li>\n<\/ul>\n<h3>To prepare onion and summer squash\/zucchini mix:<\/h3>\n<ul>\n<li>Chop onions and set aside.<\/li>\n<li>Mince the garlic and set aside.<\/li>\n<li>Saut\u00e9 onions and until tender.<\/li>\n<li>Add minced garlic to the onions and salt. Continue saut\u00e9ing for a minute.<\/li>\n<li>Add thyme, rosemary and roasted squash. Blend and set aside.<\/li>\n<\/ul>\n<h3>To assemble gratin:<\/h3>\n<ul>\n<li>In a large bowl, beat eggs.<\/li>\n<li>Add the onion and roasted squash mixtures, cooked quinoa and shredded cheese. Blend well.<\/li>\n<li>Transfer to oiled or buttered baking dish.
