{"id":266,"date":"2018-07-06T17:30:06","date_gmt":"2018-07-06T17:30:06","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=266"},"modified":"2018-07-06T17:30:38","modified_gmt":"2018-07-06T17:30:38","slug":"vegetarian-chili","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/vegetarian-chili\/","title":{"rendered":"Vegetarian Chili"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>\u00bd cup kidney beans \u2014 dried, soaked overnight then drained<br \/>\n\u00bc cup pinto beans \u2014 dried, soaked overnight then drained<br \/>\n\u00bc cup black beans \u2014 dried, soaked overnight then drained<br \/>\n1 4\u201d pieces of seaweed \u2014 wakame, kelp, or alaria<br \/>\nOlive oil<br \/>\n\u00bd pound onions \u2014 finely chopped<br \/>\n2 green peppers \u2014 chopped<br \/>\n2 carrots \u2014 chopped<br \/>\n4 sticks celery \u2014 chopped<br \/>\n2 cloves garlic \u2014 chopped (or more to taste)<br \/>\n\u00bc pound mushrooms \u2014 chopped large1\/2 teaspoon red pepper flakes<br \/>\n1 tablespoon cumin \u2014 ground<br \/>\n\u00bd teaspoon basil \u2014 dried<br \/>\n\u00bd tablespoon chili powder (or more to taste)<br \/>\n\u00bd teaspoon oregano<br \/>\n1 teaspoon salt (to taste)<br \/>\n\u00bd teaspoon black pepper<br \/>\n1 28-oz can diced tomatoes with juice<br \/>\n3 tablespoons tomato paste<br \/>\n\u00bd teaspoon Tabasco sauce<br \/>\n1 tablespoon lemon juice<br \/>\n\u00bc pound Monterey jack cheese \u2014 grated, serve as garnish<br \/>\nSour cream \u2014 serve as garnish<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Drain beans and put in separate pots. Cover with fresh water and add seaweed to cut bean gas. Bring to boil, then turn down heat and simmer till tender (check after 30 minutes).<\/li>\n<li>In another pot, heat olive oil and add all ingredients up to tomatoes. Cook for a few minutes until vegetables are half cooked.<\/li>\n<li>When the beans are thoroughly cooked, drain water and add to vegetables. Add the rest of ingredients except garnishes (cheese and sour cream).<\/li>\n<li>Bring chili to a boil then reduce heat and simmer until veggies are tender (check after 30 minutes). Adjust seasonings to taste. Keep hot on low heat or crock pot for 2 hours or more if possible.
