{"id":269,"date":"2018-07-06T17:32:55","date_gmt":"2018-07-06T17:32:55","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=269"},"modified":"2018-07-06T17:33:19","modified_gmt":"2018-07-06T17:33:19","slug":"vegetable-mulligatawny-soup","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/vegetable-mulligatawny-soup\/","title":{"rendered":"Vegetable Mulligatawny Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>2 medium onions \u2013 chopped<br \/>\n2 cloves garlic \u2013 chopped<br \/>\n2\/3 Tbsp fresh ginger \u2013 minced<br \/>\n\u00bd tsp fennel seeds<br \/>\n\u00bd tsp cumin seeds<br \/>\n\u00bd tsp whole black pepppercorns<br \/>\n1 tsp coriander powder<br \/>\n\u00bd tsp turmeric<br \/>\n1\/3 tsp cayenne pepper<br \/>\n1 Tbsp garbanzo (chick pea) flour<br \/>\n2 medium russet potatoes \u2013 cubed 1\u2033<br \/>\n4 medium turnips or parsnips \u2013 peeled &amp; sliced<br \/>\n4 medium carrots \u2013 peeled &amp; sliced<br \/>\n4 cups vegetable stock\/or water<br \/>\n1\/3 bunch basil<br \/>\n1 cup coconut milk<br \/>\n\u00bd teaspoon salt (to taste)<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Chop onions.<\/li>\n<li>Mince garlic and ginger.<\/li>\n<li>Toast fennel and cumin seeds in a cast iron skillet or pan, stirring frequently until they\u2019re fragrant and lightly browned. Remove from heat and set aside to cool.<\/li>\n<li>In a bowl, mix chick pea flour with equal amount of vegetable stock or water to form a slurry.<\/li>\n<li>Use a spice grinder to grind toasted seeds and black peppercorns into a powder. Mix with the other spices (coriander powder, turmeric and cayenne pepper).<\/li>\n<li>Heat oil in a large pot. Add diced onions, minced garlic and ginger and saute until onions are soft.<\/li>\n<li>Add diced vegetables (potatoes, turnips or parsnips and carrots), the remainder of the vegetable stock or water, the chickpea flour slurry, the spice mixture and the basil.<\/li>\n<li>Bring soup to boil, then simmer until the vegetables are tender, or until a knife easily pierces the pieces of turnip.<\/li>\n<li>This may take 45-60 minutes depending on the vegetable sizes and the total quantity in the pot<\/li>\n<li>Ladle out some of stock the and reserve for possible later use. Blend the soup to the desired consistency with an immersion blender. Add the reserved stock as neccessary to bring the soup to a desired consistency.<\/li>\n<li>Add coconut milk and salt, stirring frequently.
