{"id":275,"date":"2018-07-06T17:48:20","date_gmt":"2018-07-06T17:48:20","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=275"},"modified":"2018-07-06T17:48:41","modified_gmt":"2018-07-06T17:48:41","slug":"red-lentil-soup","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/red-lentil-soup\/","title":{"rendered":"Red Lentil Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>1\/2 pound onions \u2013 chopped<br \/>\n1\/3 pound carrots \u2013 grated<br \/>\n1 tablespoon garlic \u2013 chopped<br \/>\n1 cup ginger \u2013 chopped<br \/>\n1 tablespoon safflower oil for sauteeing<br \/>\n1 2\/3 cups red lentils \u2013 dry<br \/>\n5 cups strong vegetable stock<br \/>\n2 bay leaves, whole<br \/>\n1\/4 cup nutritional yeast (optional)<br \/>\n1\/4 pound red or green peppers \u2013 chopped<br \/>\n1 cans diced tomatoes with juice<br \/>\n2 tablespoons safflower oil<br \/>\n1 tablespoon cumin \u2013 ground<br \/>\n1 tablespoon coriander \u2013 ground<br \/>\na pince of cayenne (or to taste)<br \/>\n1\/4 cup lemon juice<br \/>\n1\/2 cup fresh parsley \u2013 chopped<br \/>\nsalt and pepper \u2013 to taste<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Chop onions and grate carrots.<\/li>\n<li>Mince garlic and ginger.<\/li>\n<li>Heat safflower oil in a soup pot and add onions, garlic and ginger. Saut\u00e9 until onions are translucent and soft.<\/li>\n<li>Sort and rinse the red lentils. Using a flame tamer or on low heat, add lentils, stock and bay leaves to the soup pot.<\/li>\n<li>Add the grated carrots, chopped peppers and diced tomatoes with their juice, nutritional yeast, and parsley to the soup pot. Bring soup almost to a boil, reduce heat and simmer, covered , stirring frequently until lentils are tender.<\/li>\n<li>While soup is cooking, heat safflower oil in a frying pan and saut\u00e9 spices gently until fragrant. If spices burn, discard and start this step over with new spices.
