{"id":281,"date":"2018-07-06T17:55:55","date_gmt":"2018-07-06T17:55:55","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=281"},"modified":"2018-07-06T17:55:55","modified_gmt":"2018-07-06T17:55:55","slug":"escarole-bean-soup","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/escarole-bean-soup\/","title":{"rendered":"Escarole &#038; Bean Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>2\/3 cup cannelini or other white beans \u2013 soaked overnight .<br \/>\n1 head escarole \u2013 chopped<br \/>\n1 onion \u2013 chopped<br \/>\n2 cloves garlic \u2013 chopped<br \/>\n2 stalks celery \u2013 sliced thin<br \/>\n2 carrots \u2013 sliced thin<br \/>\n1\/4 cup olive oil<br \/>\n6 cups vegetable broth (&amp;\/or water)<br \/>\n1\/2 teaspoon crushed red pepper<br \/>\n1\/2 teaspoon salt<br \/>\nBlack pepper to taste<br \/>\nRomano cheese, serve on the side<\/p>\n<h2>Preparation<\/h2>\n<p><strong>Prep Note: Soak beans overnight.<\/strong><\/p>\n<ol>\n<li>Drain beans that have soaked overnight and add fresh water to them, making sure there is at least twice as much water as beans.<\/li>\n<li>Bring beans to a boil and then reduce heat and simmer until tender. Drain cooked beans, keeping some of the liquid in case the soup need smore liquid. Note: As the beans cook, proceed to step 3.<\/li>\n<li>Add water to a soup pot to 1\/2 full, add salt and bring to a boil. While waiting for the water to come to a boil, coarsely chop the escarole.<\/li>\n<li>When the boiling salted water is ready, add chopped escarole and simmer until it\u2019s tender. When escarole is tender, drain in a colander. Note: The escarole can cook while proceeding to step 5.<\/li>\n<li>Chop onions.<\/li>\n<li>Mince the garlic.<\/li>\n<li>Heat the olive oil over medium heat. Add onion, garlic, celery, and carrots and saute for 5-10 minutes until onions soften.<\/li>\n<li>Add broth and spices and bring soup to a boil.<\/li>\n<li>Add cooked and drained escarole and the drained cooked beans when done. If soup needs more stock, use some of the saved bean cooking liquid.
