{"id":283,"date":"2018-07-06T17:57:59","date_gmt":"2018-07-06T17:57:59","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=283"},"modified":"2018-07-06T17:57:59","modified_gmt":"2018-07-06T17:57:59","slug":"butternut-squash-soup","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/butternut-squash-soup\/","title":{"rendered":"Butternut Squash Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>Olive oil \u2013 for saut\u00e9ing<br \/>\n2 onions \u2013 finely chopped<br \/>\n1 clove garlic<br \/>\n1 tablespoon fresh ginger \u2013 minced<br \/>\n1 tablespoon cumin seeds<br \/>\n3 pounds butternut squash \u2013 peeled, seeded &amp; cubed<br \/>\n6 cup vegetable stock (&amp;\/or water)<br \/>\n1 tablespoon tomato paste<br \/>\n1\/8 teaspoon nutmeg \u2013 freshly grated or dry<br \/>\n1 tablespoon peanut butter (optional)<br \/>\nSalt &amp; pepper to taste<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Chop onions.<\/li>\n<li>Mince the garlic and ginger. Set aside.<\/li>\n<li>Heat oil in a large pot and add onions, garlic and ginger to saute until onions are soft and translucent.<\/li>\n<li>Add cumin seeds and continue sauteing until fragrant.<\/li>\n<li>Add cubed pumpkin, squash, vegetable broth\/water, tomato paste and simmer covered until squash is soft and tender \u2013 a knife should easily enter and exit the squash. This may take 40 \u2013 50 mins depending on the quantities. Extract 2 cups of liquid and reserve for possible later use.<\/li>\n<li>Add peanut butter (optional), nutmeg and blend to a puree. (A handheld blender is handy here).
