{"id":28642,"date":"2025-09-22T14:38:48","date_gmt":"2025-09-22T19:38:48","guid":{"rendered":"https:\/\/www.dharma.org\/?page_id=28642"},"modified":"2025-09-22T14:51:05","modified_gmt":"2025-09-22T19:51:05","slug":"bibimbap","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/bibimbap\/","title":{"rendered":"Bibimbap"},"content":{"rendered":"<h2><\/h2>\n<h2><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-28643 size-full\" src=\"https:\/\/www.dharma.org\/wp-content\/uploads\/Recipes-cropped-for-WP.png\" alt=\"\" width=\"1216\" height=\"629\" \/><\/h2>\n<h2>Bibimbap with Korean Mung Bean Sprout Salad and Korean Spinach Salad (Serves 8)<\/h2>\n<h3>Bibimbap<br \/>\n<strong style=\"font-family: Lato, sans-serif; font-size: 16px; color: #333333;\">Ingredients<\/strong><\/h3>\n<p><strong>Tofu &amp; Tofu Sauce:<br \/>\n<\/strong>7 wt ounces tofu, 1 inch cubes<br \/>\n2 Tablespoons tamari<br \/>\n2 Tablespoons sesame oil<br \/>\n2 teaspoons brown sugar<br \/>\n1\/2 teaspoon garlic, minced<\/p>\n<p><strong>Vegetables &amp; Other:<br \/>\n<\/strong>1 pound spinach, fresh<br \/>\n1 1\/2 pounds bean sprouts, fresh<br \/>\n7 wt ounces shiitake mushrooms, thinly sliced<br \/>\n1\/2 pound carrot, julienne<br \/>\n1 teaspoon sea salt, fine<br \/>\n6 cups rice, steamed<br \/>\n8 each egg, fried<br \/>\nCooking oil<br \/>\nNori, long thin slices<\/p>\n<p><strong>Bibimbap Sauce:<br \/>\n<\/strong>4 Tablespoons gochujang paste<br \/>\n2 Tablespoons sesame oil<br \/>\n2 Tablespoons sugar<br \/>\n2 Tablespoons water<br \/>\n2 Tablespoons sesame seeds, toasted<br \/>\n2 teaspoons vinegar, apple or rice<br \/>\n2 teaspoons garlic, minced<\/p>\n<p><strong>Directions<br \/>\n<\/strong>1. Prepare and cook ingredients as below:<br \/>\n\u2022 Marinate tofu for about 30-45 minutes while you are working on other ingredients. When ready, add some cooking oil into a wok and cook the tofu on medium high to high heat.<br \/>\n\u2022 Mix Bibimbap sauce ingredients in a bowl.<br \/>\n\u2022 Cook spinach and bean sprouts according to the recipes below.<br \/>\n\u2022 Rinse, peel and julienne carrots. Add some cooking oil and salt in a wok and cook the carrots on medium high to high heat until tender.<br \/>\n\u2022 Clean\/rinse the shiitake mushrooms and thinly slice them. Add some cooking oil and salt in a wok and cook the mushrooms on medium to high heat until they are all cooked.<br \/>\n\u2022 Make fried eggs. (While sunny side up is common, you can make them to your preference.)<br \/>\n2. Cook the\u00a0rice on stove top or in a rice cooker using a ratio of 1 cup of rice to 1 3\/4 cup of water.<\/p>\n<h3><strong>Korean Mung Bean Sprout Salad<br \/>\n<\/strong><strong style=\"font-family: Lato, sans-serif; font-size: 16px; color: #333333;\">Ingredients<\/strong><\/h3>\n<p><strong>Main:<br \/>\n<\/strong>1 1\/2 pounds mung bean sprouts, fresh<br \/>\n2 teaspoons sea salt, to add to water<br \/>\n12 cups water, to boil<\/p>\n<p><strong>Seasoning Sauce:<br \/>\n<\/strong>2 teaspoons scallion, finely chopped<br \/>\n1 teaspoon garlic, minced<br \/>\n1 teaspoon sea salt, fine<br \/>\n2 teaspoons sesame seeds, toasted<br \/>\n2 Tablespoons sesame oil<\/p>\n<p><strong>Directions<br \/>\n<\/strong>1. Rinse the mung bean sprouts in cold water.<br \/>\n2. Bring a pot of water to a boil and add salt. Once water is boiling, plunge the sprouts into the pot and let them cook for 1-2 minutes.<br \/>\n3. Drain the water and rinse the sprouts under cold water for 1-2 minutes.<br \/>\n4. Gently squeeze the bean sprouts with your hands to remove excess water. Transfer them to a mixing bowl, add the seasoning sauce, and mix well.<\/p>\n<h3><strong>Korean Spinach Salad (Sigeumchi Namul)<br \/>\n<\/strong><strong style=\"font-family: Lato, sans-serif; font-size: 16px; color: #333333;\">Ingredients<\/strong><\/h3>\n<p><strong>Main:<br \/>\n<\/strong>1 1\/8 pounds spinach, baby, fresh<br \/>\n2 teaspoons salt, to add to water<br \/>\n12 cups water, to boil<\/p>\n<p><strong>Seasoning Sauce:<br \/>\n<\/strong>2 teaspoons scallion, finely chopped<br \/>\n1 teaspoon garlic, minced<br \/>\n1\/2 teaspoon sea salt, fine<br \/>\n2 teaspoons sesame seed, toasted<\/p>\n<p><strong>Directions<br \/>\n<\/strong>1. Boil water in an appropriate sized pan. Add salt. Once water starts to boil, plunge the spinach into the pot and let it cook for 30 seconds.<br \/>\n2. Drain the water and rinse the spinach under cold water for 1-2 minutes, Gently squeeze the spinach to remove excess water.<br \/>\n3.
