{"id":397,"date":"2018-07-10T14:54:49","date_gmt":"2018-07-10T14:54:49","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=397"},"modified":"2018-07-10T14:54:49","modified_gmt":"2018-07-10T14:54:49","slug":"thai-curry-tofu","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/thai-curry-tofu\/","title":{"rendered":"Thai Curry Tofu"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>Safflower oil<br \/>\n1 tablespoon ginger \u2013 grated<br \/>\n1 tablespoon garlic \u2013 crushed<br \/>\n1\/2 pound onions \u2013 chopped<br \/>\n1\/2 pound red and green bell peppers \u2013 sliced<br \/>\n2\/3 pound green beans \u2013 sliced diagonally 2\u2033 long<br \/>\n1\/4 head cabbage \u2013 chopped (optional, good if having a large group)<br \/>\n1\/4 pound carrots \u2013 sliced thin on diagonal<br \/>\n1\/4 head cauliflower \u2013 cut into bite-size florets<br \/>\n1 pound tofu \u2013 cut into cubed 1\/2\u2033 pieces<br \/>\n2 tablespoons tamari soy sauce<br \/>\n2 tablespoons Thai green curry paste (or to taste)<br \/>\n1 cup coconut milk<br \/>\n1\/3 bunch basil leaves (optional) \u2013 (Thai basil is best)<br \/>\n2 tablespoons lime or lemon juice<br \/>\nSalt and pepper \u2013 to taste<\/p>\n<p><strong>Note: You can substitute other fresh vegetables if desired.<\/strong><\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Heat oven to 400 degrees.<\/li>\n<li>Heat a couple of tablespoons of safflower oil in a wok and saute the ginger and garlic over medium heat for a few minutes<\/li>\n<li>Add the onions and bell pepper and saute until just barely soft (the peppers should still be brightly colored). Remove from heat.<\/li>\n<li>Par-steam the green beans, carrots and cauliflower until crisp tender. Be careful not to overcook. Put the cooked vegetables in a strainer, then in a bowl of ice water. When cold let drain.<\/li>\n<li>Toss the tofu in a small amount of soy sauce until lightly colored, then oil and bake for 20 minutes or until lightly browned. You may also brown them with a little oil in a skillet.<\/li>\n<li>In a large saucepan, heat a little oil. Add Thai green curry paste and saute for 1 minute. Add coconut milk, soy sauce, and lime juice and continue to cook until the coconut milk bubbles and reduces a little.<\/li>\n<li>Add vegetables and tofu.
