{"id":399,"date":"2018-07-10T14:59:55","date_gmt":"2018-07-10T14:59:55","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=399"},"modified":"2018-07-10T14:59:55","modified_gmt":"2018-07-10T14:59:55","slug":"provencal-vegetable-soup","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/provencal-vegetable-soup\/","title":{"rendered":"Provencal Vegetable Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>1\/3 pound leeks \u2013 thinly sliced<br \/>\n1\/3 pound celery \u2013 cut into 1\/2\u2033 pieces<br \/>\n1\/3 pound carrots \u2013 cut into 1\/2\u2033 pieces<br \/>\n2 cloves garlic \u2013 finely chopped<br \/>\n1\/2 teaspoon thyme<br \/>\n3 1\/4 tablespoons olive oil<br \/>\n1\/3 pound red potatoes \u2013 cut into 1\/2\u2033 pieces<br \/>\n1\/3 pound chard \u2013 well washed, stems cut into 1\/2\u2033 pieces, leaves coarsely chopped<br \/>\n5 cups vegetable stock (or water)<br \/>\n1\/3 cup navy beans \u2013 soaked overnight and cooked<br \/>\n1\/3 pound zucchini \u2013 cut into 1\/2\u2033 pieces<br \/>\n1\/3 pound green beans \u2013 cut into 1\u2033 pieces<br \/>\nSalt and pepper to taste<br \/>\n1\/2 cup fresh basil<br \/>\n1\/3 cup fresh parsley<br \/>\nRomano cheese \u2013 grated<br \/>\nTomatoes (if in season) also make a nice addition to this soup, as does just about any vegetable straight from the garden or farmer\u2019s market.<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>In a large soup pot, saute leeks, celery, carrots, garlic and thyme in 2 tablespoons olive oil until soft.<\/li>\n<li>Add potatoes and chard stems and saute for 5-10 minutes, until they start to soften.<\/li>\n<li>Add stock, green beans, chard leaves, navy beans and zucchini. Bring to a boil, then turn down to simmer and cook until vegetables are tender.<\/li>\n<li>Taste and season with salt and pepper.<\/li>\n<li>In a food processor, combine basil, parsley and remaining olive oil until a paste is formed.
