{"id":403,"date":"2018-07-10T15:03:44","date_gmt":"2018-07-10T15:03:44","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=403"},"modified":"2018-07-10T15:03:44","modified_gmt":"2018-07-10T15:03:44","slug":"aloo-matar-sabji-potatoes-peas-in-gravy","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/aloo-matar-sabji-potatoes-peas-in-gravy\/","title":{"rendered":"Aloo Matar Sabji \u2013 Potatoes &#038; Peas in Gravy"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>1\/2 pound onions \u2013 chopped<br \/>\n2 cloves garlic \u2013 minced<br \/>\n1 tablespoon fresh ginger \u2013 minced<br \/>\n1 28oz can diced tomatoes \u2013 drain liquid and set aside<br \/>\n1 tablespoon safflower or canola oil<br \/>\n1\/2 tablespoon cumin seeds<br \/>\n4 cardamom pods<br \/>\n1 cinnamon stick (or 1\/2 teaspoon powder)<br \/>\n1 bay leaf<br \/>\n1 teaspoon turmeric<br \/>\n1\/2 tablespoon ground coriander<br \/>\n3\/4 teaspoon chili powder (or to taste)<br \/>\n1 1\/2 pound potatoes \u2013 diced<br \/>\n1\/2 pound frozen peas<br \/>\n3\/4 teaspoon garam masala<br \/>\n1\/4 bunch cilantro<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Heat the safflower oil in a large pot using a flame tamer. Add the cumin seeds, cardamom pods, cinnamon stick and bay leaf to the hot oil and allow the cumin seeds to sizzle. Avoid burning the spices.<\/li>\n<li>Turn down the heat a little, add the chopped onions to the spices and fry until soft and translucent.<\/li>\n<li>Add the minced garlic, ginger, turmeric, coriander and chili powder and stir for a minute.<\/li>\n<li>Add the drained tomatoes and continue frying until water starts to come out of the tomatoes.<\/li>\n<li>Add the peas and potatoes and stir fry for a minute or two until the vegetables look well coated and shiny.<\/li>\n<li>Add just enough of the drained tomato juice and water to barely cover the vegetables and bring the pan to a boil.
