{"id":409,"date":"2018-07-10T17:12:08","date_gmt":"2018-07-10T17:12:08","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=409"},"modified":"2018-07-10T17:12:08","modified_gmt":"2018-07-10T17:12:08","slug":"lasagna","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/lasagna\/","title":{"rendered":"Lasagna"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<h3>Sauce Ingredients<\/h3>\n<p>1 medium onion \u2013 chopped<br \/>\n1 tablespoon garlic \u2013 minced<br \/>\n1 tablespoon olive oil<br \/>\n3 stalks celery \u2013 chopped finely<br \/>\n1 tablespoon dried fennel seeds \u2013 coarsely chopped<br \/>\n1 tablespoon dried basil<br \/>\n1\/4 teaspoon salt<br \/>\n1 14oz can diced tomato \u2013 with juice<br \/>\n2 8oz cans tomato sauce<br \/>\nFilling Ingredients<br \/>\n1 pack frozen spinach \u2013 thawed and well drained<br \/>\n1 tablespoon parsley \u2013 minced<br \/>\n2 tablespoons romano cheese<br \/>\n1\/2 pound ricotta cheese<br \/>\n1\/2 pound lasagna noodles (uncooked)<br \/>\n1\/2 pound mozzarella cheese \u2013 grated<\/p>\n<h2>Preparation<\/h2>\n<h3>Notes<\/h3>\n<ol>\n<li>Ricotta is much easier to spread if it is heated in a double boiler to soften. Be careful to stir it often.<\/li>\n<li>Lasagna needs to sit for at least 10 mins after cooking to \u2018set\u2019. This is important, or it will slide all over the place.<\/li>\n<\/ol>\n<h3>Part 1 \u2013 Making the Sauce<\/h3>\n<ol>\n<li>Heat the olive oil in a large pan and saut\u00e9 onions, garlic and celery until the onions are translucent.<\/li>\n<li>Add the fennel seeds, dry basil and salt, and saut\u00e9 for an additional minute.<\/li>\n<li>Add diced tomatoes with juice plus tomato sauce. Using a flame tamer to diffuse the flame (if you have a gas stove) and the lowest heat possible, simmer sauce for about 35-45 mins, stirring occasionally.<\/li>\n<li>Part 2 \u2013 Making the Spinach\/Ricotta Filling<\/li>\n<li>Squeeze or press liquid from spinach.<\/li>\n<li>Mix parsley and spinach and romano cheese with the ricotta.<\/li>\n<\/ol>\n<h3>Part 3 \u2013 Preparing for Lasagna Assembly and Baking<\/h3>\n<ol>\n<li>Preheat oven to 375 degrees.<\/li>\n<li>Oil an ovenproof lasagna dish\/pan and cover with a thin layer of sauce.<\/li>\n<li>Layer uncooked lasagna noodles over the sauce, then a layer of spinach-ricotta mixture and mozzarella followed by a layer of sauce.<\/li>\n<li>Continue layering in this way until there are at least 3-4 layers of noodles in each pan.<\/li>\n<li>Finish with noodles on the top, covered completely with sauce.<\/li>\n<\/ol>\n<h3>Part 4 \u2013 Baking the Lasagna<\/h3>\n<ol>\n<li>Bake covered for 40-45 minutes.<\/li>\n<li>After 45 minutes, remove the cover and continue baking for an additional 10 minutes or until the top browns lightly and the lasagna interior is hot.
