{"id":418,"date":"2018-07-10T17:32:28","date_gmt":"2018-07-10T17:32:28","guid":{"rendered":"http:\/\/web1.dharma.org\/?page_id=418"},"modified":"2018-07-10T17:32:28","modified_gmt":"2018-07-10T17:32:28","slug":"maple-bottomed-rosemary-skillet-cornbread","status":"publish","type":"page","link":"https:\/\/www.dharma.org\/resources\/recipes\/maple-bottomed-rosemary-skillet-cornbread\/","title":{"rendered":"Maple-Bottomed Rosemary Skillet Cornbread"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Serves 6<\/h3>\n<p>\u00be cup cornmeal<br \/>\n\u00be cup whole wheat pastry flour<br \/>\n\u00bd teaspoon salt<br \/>\n\u00bc teaspoon baking soda<br \/>\n\u00bd tablespoon baking powder<br \/>\n1 teaspoon rosemary \u2013 crushed or ground<br \/>\n1 tablespoon sugar<br \/>\n1 egg (beaten)<br \/>\n2 tablespoons butter \u2013 melted<br \/>\n1 cup milk<\/p>\n<h3>For the bottom of the pan:<\/h3>\n<p>2 tablespoons maple syrup<br \/>\n2 tablespoons butter \u2013 melted<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Preheat oven to 375 degrees F (conventional)<\/li>\n<li>Mix dry ingredients except for sugar and rosemary and set aside.<\/li>\n<li>Warm the milk slightly and then add to it the sugar, rosemary and the first amount of melted butter. Take off burner and when just warm (not hot) add the beaten egg.<\/li>\n<li>Put maple syrup and second amount of butter into a large cast iron skillet or Pyrex baking dish and heat gently on burner (skillet) or in oven (Pyrex) till butter is melted. Then put aside.<\/li>\n<li>Add milk mixture to dry ingredients and stir just until smooth\u2013do not over-mix. Pour the batter into the pan, over the maple syrup and butter.<\/li>\n<li>Place pan in oven and bake until done (about 30 minutes). Top should be golden brown and spring back to the touch.
